Found in China and Russia, Amur sturgeon can live more than 30 years. The largest individuals can grow to over three metres and weigh more than 190kg. This long-lived fish only starts to produce its characteristic large grey to emerald coloured eggs at the age of ten.

This sturgeon  requires 8-10 years for maturation.

Caviar size is from 3.0 to 3.2mm with color ranges from brownish-grey to pale brown.
